Amazake

Authentic and nourishing amazake; you can also use it to replace sugar in cooking.

Ingredients 100 g koji
300 g cold rice
300 cc hot water
Method of preparation
  • 1.

    Place the cold rice in a rice cooker and add hot water, stirring it very well.

  • 2.

    Break up the koji if they are a matted together or lumpy. Then, add in the mixture and stir everything well.

  • 3.

    Cover the mixture with a cloth and leave the lid open. Use the “keep warm” function of the rice cooker to keep the mixture at 55°C for half to a full day (12 to 15 hours in case of using white rice koji, 24 hours in case of brown rice koji).

  • 4.

    When the taste becomes sweet according to preference, transfer it into a pot and cook it on medium heat and maintain stirring to prevent burning. When it starts boiling, turn off the heat.

Tips
  • You can store it in a sealed container for one to two weeks in a fridge or in a zipped bag in a freezer for a longer period of time.
